Ingredients
4 medium vine tomatoes chopped
1/2 red onion finely diced
1/4 cup fresh basil chopped
1 ciabatta roll cut in half lengthways
2 eggs
2 slices good quality haloumi (from the deli)
1 jar shop bought basil pesto (homemade is great if you have the time)
Olive oil
Method
Toast the ciabatta
Mix together the tomatoes, red onion and chopped basil add the olive oil and season with salt and pepper.
Fry the haloumi in a dry fry pan to brown and soften.
Poach the eggs to your liking.
Place the ciabatta on the plate and spread half the pesto onto each.
Top with the tomato,onion and basil and drizzle a little balsamic vinegar over 1tsp should be enough.
Add the haloumi and top with the poached egg.
Add cracked black pepper.
Devour
