Serves 2 (large appetites)
Ingredients
500g lean lamb mince
4 spring onions chopped finely
4 tsps chopped fresh mint
80g haloumi cheese chopped into 4 cubes
1 egg
1 Turkish loaf (1/4 of it sliced in half lengthways)
1 Avocado
4 tbsps greek yoghurt
2 tbsps chopped mint
2 tsps fresh lemon juice
Zest 1/2 lemon
2 handfuls spinach
Method
In a large bowl mix together the lamb mince, spring onions, 4 tsps chopped mint and the egg. Season with salt and pepper and mix to combine.
Shape into 4 equal size balls.
Flatten each one then add a cube of haloumi to the centre.
Roll back into a ball to cover the cheese completely and flatten in to burgers.
Lightly spray each side with olive oil and place on a hot griddle pan.
Cook for 4 minutes then flip and cook the other side.
Peel the avocado and slice in half then add to the grill pan.
Lightly toast the turkish bread.
Make the dressing by mixing the yoghurt, lemon juice and mint together.
Add the toast to the plate and spread generously with the yoghurt, lemon and mint dressing.
Add spinach on top then the burgers.
Fan the warm avocado on top and drizzle on the remaining dressing.

Thoughts
This dish is hard to make look refined and pretty on the plate, but the taste more than makes up for it.
