Zucchini Pasta with Garlic, Chilli and Pine Nuts


Serves 2

4 zucchini spiralised
2 tsps coconut oil
1 tsp chilli flakes

75g pine nuts
4 garlic cloves crushed

Add the coconut oil to a large fry pan or wok and heat on medium.
Add the garlic and chilli flakes, stir for a minute before adding the zucchini pasta.
Turn up the heat to high and cook for 2 minutes ensuring the zucchini is coated in the oil, garlic and chilli.
Add the pine nuts, stir through and season with salt and pepper.

This is something they I throw together often when I need a healthy dinner fast. You could add prawns or chicken or even chorizo to change it up but it is so good as it is. Add parmesan if you like.
