Almond Milk Waffles with mixed Berries, Maple Syrup, Flaked Almonds and Greek Yoghurt.

1 1/2 cups self raising flour
1/4 cup caster sugar
Pinch salt
500ml unsweetened almond milk
1/4 cup olive oil (mild)
2 eggs separated
Vanilla extract
250g strawberries
150g raspberries
4 tbsps greek yoghurt
4 tbsps flaked almonds
Icing sugar to decorate

In a large bowl, sieve the flour and add the pinch of salt and caster sugar.
In another bowl mix the almond milk, egg yolks, vanilla essence and olive oil. Add this mix to the flour mix.
Whisk up the 2 egg whites and fold into the other mixture.
Heat up the waffle maker and use 1/2 cup of the batter approx for each waffle.
Cook as per instructions until brown and crispy. Turn half way through if necessary.
Serve with maple syrup, berries and flaked almonds then add a teaspoin of greek yoghurt and dust with a little icing sugar.
