4 egg whites
500g almond meal
11/4 cup caster sugar
2 tsps baking powder
1 cup icing sugar
Glace cherries and blanched almonds to decorate
Preheat the oven to 170 fan forced or 190 conventional and line 2 baking trays with wax paper.
Whisk the egg whites until fluffy.
In a seperate bowl mix the almond meal, caster sugar and baking powder together. Make a well in the centre and add the egg whites.
Mix together to form a dough.
Roll into equal size balls and then roll each ball generously through the extra icing sugar.
Place onto the prepared tray leaving space between as the mix will spread out.
Decorate using the glace cherries and blanched almonds.
Bake for 15 minutes and cool.
