I love this and as usual always make double to freeze the extra. Do not freeze the cauliflower rice.
500g lean minced beef
2 chopped onions
1 red capsicum
5 tbsps mild curry powder
1 tsp chilli
2 tsps garam masala
2 tsps salt
1 tin coconut cream
1 medium cauliflower
1 tsp garlic paste
1 tsp lemongrass paste
In a large pan fry off the onions and garlic and lemongrass.
Add the minced beef and cook until browned.
Add the coconut cream, garam masala, chilli flakes, red capsicum and salt.
Simmer for 8 to 10 minutes.
Blitz up the cauliflower, root and leaves as well to rice consistency using a pulsing action.
Serve with fresh coriander (optional)
I personally prefer not to cook the cauliflower as it cooks when I heat it in the microwave but its up to you if you want to pre cook it .
