Buffalo Chicken

This recipe was one that my daughter Kia found from momsneedtoknow.com.

Its quick, easy and would fill most peoples needs when it comes to simple and ridiculousy tasty chicken in a flash. You do fry the chicken which may not appeal to all, but its a treat rather than everyday so it works for me.

Ingredients

2 1/2lbs of chicken of choice (tenderloins/drumsticks, wings or a combo of all)
2 1/4 cups plain flour
1/4 cup cornstarch
2 tsps salt
1 tsp pepper
2 tsps chilli powder mild
2 tsps smoked paprika
1 cup milk
1/2 cup water
1 egg
Vegetable or canola oil for frying
1 cup Franks hot sauce
1/2 cup melted butter
1/4 cup italian dressing…optional see method for reasoning.

Method
Using a large plastic freezer bag add the flour, cornstarch, chilli powder, paprika, salt and pepper and shake well to combine.
Mix together in a large bowl, the egg, water and milk.
Drop each piece of chicken into the egg and milk and water mixture and then drop into the flour mixture.
Tap of excess and continue until all the chicken has been coated.
Repeat the process again so all chicken has been coated twice.
Deep fry all the chicken and drain on paper towel.
Combine the franks hot sauce and melted butter together and whisk to combine.
If you prefer less heat now is the time to add the italian dressing listed as optional.
Dip thr fried chicken into the sauce until well coated and serve.

I served it with the potato salad and tabbouleh that have already been posted to the page.
