Butterscotch Fudge

Ingredients
395g tin condensed milk
150g butter
275g brown sugar
2 tbsps golden syrup
200g premium white chocolate

Method
Grease and line a tin with wax paper.
In a heavy saucepan on low heat melt the butter, sugar, golden syrup and condensed milk for 10 minutes until the sugar has disolved and the butter is melted. Stir constantly.
Increase the heat to medium, continue stirring and cook for another 10 to 12 minutes until the mixture thickens and coats the back of the wooden spoon.
Working at speed, add the white chocolate, stir until melted and pour into the prepared tin. This needs to be quick as it will start to set straight away.
Place in the fridge for 4 hours. Cut and serve.
