Lamington Cheesecake taste.com.au

Its been a while since I have put anything too naughty on the page so I thought it was time.
Most of us will have seen this on fb and at least 5 peple have tagged me and asked me to make it.
Its easy as you do not have to make the lamingtons and it is as delicious as it is pretty to look at.


30 Lammington fingers

1/4 cup boiling water

3 tsp gelatin powder

500g full fat cream cheese, room temperature

2 taps vanilla extract

2/3 cup sugar

330ml coconut cream

1/4 cup cocoa powder

300ml whipped cream

Fresh raspberries to decorate



Line and grease a springform cake tin 22cm.

Line the base and sides of the prepared tin with the lamington fingers.  Press to ensure no gaps.

Add the boiling water into a dish, add the gelatine, mix until desolved and cool for 5 minutes.

In a stand mixer or with electric beaters add the cream cheese, sugar and vanilla and beat well to combine. Add the gelatin, beat again then the coconut cream beat until smooth.

Divide the mixture into two equal portions then add the cocoa powder to just one. Beat to combine.

Spoon the mixture on top of lamingtons alternating between the plain and chocolate mix. Use a skewer to get the marbled effect.

Place in the fridge for 6 to 8 hours to set, then decorate with the remaining lamingtons, fresh raspberries and whipped cream.
