Potato Cakes with Tabbouleh and Poached Eggs

I love this meal and it is great at any time of the day.
Quick and delicious and also works using sweet potato or even a mix of both.
Play around with it and add fresh herbs to make it even more delicious.

Ingredients
4 medium potatoes
4 eggs, plus 1 egg for binding
2 tsps smoked paprika
Salt and pepper to taste
Tabbouleh (recipe posted earlier on page or shop bought is fine)
Olive oil

Method
Blitz the potatoes, washed and skin on in the microwave until soft then mash with a fork, I leave the skins on for more fibre.
Add paprika, salt and pepper and taste.
Add the egg and mix well to combine. If potatoes were a little bigger thats fine add another egg.
Form into 4 patties and add to the fry pan on medium heat with a little olive oil.
In a smaller saucepan poach the eggs until they are at your desired softness.
Turn the potato cakes to brown the other side and when crispy and cooked through you are ready to serve.
Add a potato cake to the plate, then the tabbouleh and finally the poached egg.
