Potato Salad

This is a bit of a tribute to my mum who made a potato salad every xmas ready for boxing day leftovers.
It is a bit more fancy but hers was the inspiration.

Method
1 kg potatoes
3 tsps capers
3 tablespoons mayonnaise
4 tbsps sour cream
Juice and zest of 2 lemons
10 eggs hard boiled
6 gherkins chopped
Salt and cracked black pepper

Method
Boil the potatoes skin on until cooked but not too soft. Drain and leave to cool.peel off the skin and chop into bitesize pieces.
Boil the eggs and peel when cooled. Chop up.
Place into a large bowl and add the capers and gherkins.
In another bowl add the mayo, sour cream, zest, juice salt and cracked black pepper.
Pour over the salad and mix.
