I had this fish left over from a recipe I was doing for meal prep this week. I hate waste so it made a really great light breakfast 😀
200g smoked cod
100g spinach and rocket salad mix
1 tsp coconut oil
Fry the cod on medium heat turning half way until cooked. The fish should be just cooked and translucent inside. About 3 minutes each side.
Place a pan of water on medium heat and bring to a steady boil. Reduce to simmer then poach the eggs.
Divide the spinach/rocket mix between 2 plates, then add the fish on top and finally the poached egg.
Add cracked black pepper, no salt as the fish is smoked.
