1.5 cups cottage cheese
100g pecans or walnuts
1 brown onion
1 cup rolled oats
1 cup panko breadcrumbs
2 tsps sea salt
2 tbsps Worcestershire sauce
Frozen puff pastry sheets or homemade puff pastry
1 egg lightly whisked
Process the cottage cheese, nuts, worcestershire sauce, onion and eggs until finely chopped.
Tip into a large bowl and add the oats, panko crumbs and 2 tbsps each of the chives and parsley. Mix to combine. Seaon with salt and pepper.
Cut the square sheet of pastry into four smaller squares.
Add some mixture along one edge and roll so the pastry meets at the edges. Use a fork to seal the edges.
Cut in half and place on a tray lined with wax paper.
Repeat until all the pastry and cottage cheese mix have been used.
Brush the tops with the beaten egg and sprinkle with poppy seeds.
Cook on a preheated oven at 200°c for 20 to 25minutes until golden brown.
I am not a vegetarian but sometimes I enjoy making and eating meat free dishes. I made these for some amazing friends of mine that are vegetarian and was really nervous about what they would think of them.
The results were delicious and they loved them, so did my own family of meat eaters and they will now be added to the favourites vault.
