Chilli Minced Beef Breakfast Wraps

Makes 15

Ingredients
10 eggs lightly beaten
1 tsp chilli flakes
2 tsps dried oregano
1/2 tsp salt
500g lean minced beef
1 large white onion finely chopped
1 cup frozen peas
1 cup Franks hot sauce

Method
Mix the 10 eggs and add the chilli and oregano and salt.
In a dry fry pan on medium heat add a small amount of the egg mixture and swirl around to just cover the base. Cook for a minute and then flip and remove to a plate. Continue until all the egg mix has been used. Leave to cool.
In another fry pan brown the mine and drain to remove excess fat.
Add the onion and peas and cook for another few minutes.
Add the hot sauce and cook until there is no more liquid in the pan.
Season and leave to cool.
Place in the egg wrap and roll.
That’s it.
High protein and healthy brekkie on the go.
