•2 cups walnuts
•17 medjool dates deseeded
•3 tbsps cacao or cocoa
•2 tsps cacao nibs (optional)
•Pinch of salt
•1 to 2 tsps peppermint ( food grade oil is best but essence will work but you may need to add more. Test as you go, you do not want it overly strong)

•Place the walnuts in the processor and blend to the desired coarseness, I like mine a little crunchy.
•Add the dates, cacao/cocoa, nibs if using and blend until the mix resembles a fine sticky crumb.
•Add the food grade peppermint oil/peppermint essence and blitz again to combine.
•Use your hands to shape the mixture into balls then place in the fridge to set.
