Serves 2 to 3
250g frozen peas
1 large white onion
1.5 cups fresh mint plus extra
Salt and pepper
2 tbsps sour cream
2 tbsps water
4 lamb chops
Method
Season the lamb chops on both sides with salt and pepper and grill until cooked to your liking and brown and crispy.
In a pan add the peas, mint, water, chopped onion and cook for 3 to 4 minutes until the peas and onion soften.
Blitz until smooth with a stick blender and season. Stir in the sour cream.
Serve using the extra mint to garnish.
I love this puree and use it with fish or lamb backstrap as well. You can add a little chilli if desired or freshen it up with a little lemon zest. Its a great replacement for potatoes or your usual sides. Yum.
