Peppered Salmon with Black Bean Salad and Lime Vinaigrette.


1 can black beans rinsed and drained
1 can 4 bean mix rinsed and drained
1/2 cup coriander chopped
1 red onion chopped
1 red capsicum
1 yellow capsicum
1 jalapeno chopped and deseeded
2 avocado chopped
4 pre cooked peppered salmon fillets (store brought 150g)

Zest of 2 limes
10 tbsps lime juice
2 cloves garlic crushed
1/4 tsp cayenne pepper
1 tsp salt
1 tsp ground cumin

Place everything ecept the salmon and vinaigrette ingredients into a large bowl and gently mix to combine.
Place the vinaigrette ingredients into a jar and shake well to combine.
Pour the vinaigrette over the black bean salad and gently stir to combine taking care not to mash the avocado.
Serve with the salmon and lime wedges.
