I have bananas that go brown way to fast at the moment and this is the best way to use and not waste them.
115g brown sugar
115g butter room temperature
2 cups plain flour
1 tsp bicarbonate of soda
Preheat the oven to 180°C. Line your loaf tin with wax paper.
Smash the bananas into a bowl.
Sift the flour, salt, and bicarbonate of soda into a separate bowl.
In another bowl using just a fork mash the sugar and butter together until well combined.
Add the eggs.
Add this mix to the smashed bananas and stir until just combined. Do not overmix or it will be a dense and heavy bread.
Bake for 55 to 60 minutes or until the skewer comes out clean.
