Meal Prep is my fail safe way to get through a busy week with great food that requires a minimum of fuss.
100g Rocket leaves washed
4 spring onions chopped
8 mixed colour baby capsicum sliced
250g yellow baby tomatoes
2 chicken breasts
4 tsps sumac seasoning
Olive oil
4 tbsps natural greek yoghurt
3 tsps lemon and black pepper dried rub
2 tsps crushed garlic
Juice and zest of 1 lemon
Place the salad in a large bowl and toss to combine.
Preheat the oven to 180 and place the chicken breasts on to foil.
Drizzle a little olive oil on the chicken and then sprinkle the sumac on top equally.
Roast for 40 to 50 minutes size depending and check it is fully cooked through, moist with no pink inside.
Cover and leave to rest and cool.
Make the dressing by mixing together the greek yoghurt, lemon and pepper rub, garlic, lemon juice and zest.
If you prefer it a little more runny just add a splash of milk.
Slice the chicken and add to your tubs with the salad and a pot of dressing. Delicious and quick.
You will have spare dressing that you can place in the fridge for up to a week 😁😁
