Loaded Spinach and Feta Frittata

Most people know that I love all types of food, but great and simple healthy food is what I love to eat most of the time😉. This week I will post some more recipes from Joe Wicks as I make them daily and love his approach to living well and still enjoying the foods you love without cutting out any food groups. Google him, he is fab!

First out of the gate a staple breakfast in our house, great for meal prep, low carb great taste.

Serves 3

Ingredients
8 eggs
4 egg whites
12 spring onions chopped
590g baby spinach leaves
135g full fat feta cheese
Fresh nutmeg
1 tsp olive oil
190g new potatoes cooked and thinly sliced.

Method
Preheat the oven to 180
In a large non stick fry pan add the oil and cook the spring onions on medium heat until softened.
Add the spinach and cook until wilted, this will take a few minutes. Add the sliced potatoes.
Whisk together the eggs and egg whites and grate in some nutmeg.
Pour into the fry pan and stir everything together.
Crumble the feta on top and place in the oven until cooked through, about 15 to 20 minutes.

Serve on its own or with a green salad.
