Cowboy Beans and Poached Egg    Joe Wicks  Post Workout

Serves 1

This is great to make in batches and freeze, its filling and just what the doctor ordered either after a workout or when you are just starving 🤩🤩🤩

Ingredients
1 tsp olive oil
2 chicken sausages
145g tin chopped tomatoes
1 tsp tomato puree
11/2 tsp worcestershire sauce
1 tsp smoked paprika
1 tsp dijon mustard
1 tsp honey
190g cannellini beans, washed and drained.
1 egg
Salt and pepper to taste.

Method
Add the oil to a frypan and cook the sausages on medium until cooked through through,  chop into pieces and set aside.
In another large saucepan, add the tomatoes, honey, smoked paprika, mustard, worcestershire sauce and tomato puree. Bring to the boil then simmer to reduce and thicken a little 5 minutes should do it.
Add the cannellini beans and heat through.
Serve in a bowl and add a poached egg on top.
