Huevos Rancheros

Joe Wicks Post Workout

Serves 1

Ingredients
1tsp olive oil
1/2 red onion
1/2 red capsicum
1 garlic clove crushed
130g tinned chopped tomatoes
2 corn tortillas
1 tsp smoked paprika
95g tinned black beans, rinsed and drained
20g feta
Handful of chopped coriander.

Method
In a deep fry pan, add the oil and red onion, garlic and fry on medium heat to soften.
Add the capsicum and cook to soften.
Add the tinned tomatoes, paprika, and black beans and bring to the boil.
Reduce to a simmer until the sauce thickens a little.
On an oven tray, heat the tortillas on 180.
Fry the 2 eggs to your liking.
On a plate place the 2 warmed tortillas, add the tomato mix on top, add the fried eggs and feta.
Sprinkle with chopped coriander.
Yum.

Batch cook the tomato sauce and freeze in portions then just cook the eggs when you want to eat it.
Quick and easy, but filling and a great carb refuel meal.
