New York style Steak and Eggs JW Low Carb

Serves 1

I doubled the recipe for two.

95g diced cooked potatoes
11/2 tsp olive oil
1/2 white onion chopped
1/2 red capsicum deseeded and chopped
130g sirloin/rump steak
Salt and pepper
2 eggs

Boil or microwave the potatoes until cooked but not soft, leave to cool a little and dice.
Add the oil to a fry pan and cook the capsicum and onion on medium heat until softened. Remove from pan and set aside.
Add a little oil into your palm and massage on to each side of the steak. Add salt and pepper and place back into the same frypan on high heat.
Cook for 3 minutes each side for medium, or to your liking. Remove and leave to rest for 5 minutes under foil.
Fry the potatoes until crispy, then add the capsicum and onion back to the pan to heat through.
Fry the eggs, slice the steak and serve.

This is an amazing breakfast or light dinner, low carb so great for pre workout. Delicious!!!
