Smoked Salmon, Scrambled egg and Spinach Bagel

Joe Wicks post workout serves 1

Nothing more to say than OMG😍😍😍😍

Ingredients
45g smoked salmon
2 eggs
2 egg whites
1/4 yellow capsicum or tomato
Handful of spinach
1 bagel
Fresh lemon juice
Salt and black pepper
1/2 tsp olive oil

Method
Toast the bagel.
Place the oil in a fry pan and whisk the eggs and egg whites together.
Add to the oil on low heat and gently scramble.
Add the chopped capsicum/tomato to the eggs whilst scrambling.
Squeeze the juice of the lemon onto the toasted bagel and add salt and pepper.
Place the spinach on the bottom, then the egg and then the salmon.
Add a final squeeze of lemon juice, and black pepper and devour.

Note
The recipe calls for cooked spinach, however I prefer it raw. Either way this will leave you full and with a huge smile on your face πŸ‹οΈβ€β™€οΈ
