Ingredients
1 3/4 cups plain flour
3/4 cup caster sugar
1/2 tsp salt
1 tsp baking powder
2 eggs
1 cup greek yoghurt
1/2 cup vegetable oil
3/4 cup choc chips (mix white,dark and milk if you like)
Method
Sift the flour, salt, and baking powder into a bowl and add the sugar. Stir to combine.
In another bowl add the vegetable oil, eggs and yoghurt and whisk to combine.
Pour the wet mixture into the dry and stir until just combined, do not over mix or the muffins will be dense and heavy.
Add the chocolate chips.
Scoop into 12 paper cases.
Bake at 180 for 20 to 25 minutes or until a skewer comes out clean.
Leave on a rack to cool.
Notes
Double the recipe as these freeze well.
Substitute the choc chips for sliced almonds and add 1/2 cup shredded coconut as well.
Add whichever filling you like or change it up each time. Blueberries are delicious too.
