Nacho Chicken with Black Bean Salsa
150g corn chips
1.5 cups fresh breadcrumbs
2 eggs lightly beaten
600g chicken tenderloins
Canola oil to shallow fry
425g tin of black beans
1 avocado chopped
2 tomatoes chopped
30g taco spice mix
1 tbsp lime juice, plus lime wedge to serve
Process thr corn chips until they are finely crushed. Transfer to a bowl, stir in the breadcrumbs and spice mix.
Place eggs in a shallow bowl, dip the chicken into the egg and then into the breadcrumb mix to coat. Repeat this process twice.
Heat the oil in a large fry pan on medium heat, and cook the chicken for 2 to 3 minutes on each side until it is cooked through. Transfer to a plate lined with paper towel and drain.
Combine the black beans, avocado, tomatoes and juice in a bowl.
Delicious, healthy and really easy to make.
