Ingredients
250g biscuit of choice, I used a plain one but choc is good for a change.
150g melted butter
1/4 cup cashew nuts
1 tbsp brown sugar
2/3 cup 160ml thickened cream
1 x 395g tin sweetened condensed milk
Juice and zest of 4 large limes
Whipped cream for decoration
In a food processor blitz together the biscuits and cashews until they resemble breadcrumbs.
Add the melted butter and blitz again to coat everything.
Pour into a 20cm tin and push up the sides. Place in the freezer thoughjust you make the filling.
Zest and juice the limes.
In a large bowl add the cream, eggs, condensed milk, 3/4 lime zest and the lime juice. Mix well to combine.
Pour into the biscuit base and cook on 170 for 40 to 45 minutes.
Leave to cool completely, top with whipped cream and sprinkle the rest of the lime zest on top.
