Nachos

2 small corn tortillas cut into 8 triangles
1 tbsp cheese
150g lean minced beef
100g tinned tomatoes
1/2 medium onion chopped finely
1 tbsp tomato puree
1 tsp smoked paprika
Splash water
1 tsp garlic crushed
1 tbsp light sour cream

Method
Preheat the oven to 200°C.
Place the tortilla triangles on to a baking sheet.
In a fry pan add the minced beef and fry until cooked and browned. Add the onion, paprika, tinned tomatoes, garlic and splash of water. Cook until thickened slightly. Season.
Place the tortillas in the oven to crisp up 5 to 10 minutes oven depending.
Serve with the sour cream and cheese, coriander if desired.
