I love poached eggs and smoked salmon together. This recipe is a Joe Wicks one and it is great for any time of the day. Fast, easy and healthy this has got it all.
4 egg yolks
2 tsps dijon mustard
110g greek natural yoghurt
2 wholelmeal muffins toasted
2 handfuls baby spinach
120g smoked salmon
Salt and black pepper
In a heatproof bowl place the egg yolks, yoghurt and dijon mustard.
Mix together and place on top of a pan of simmering water. Ensure the water is not touching the base of the bowl.
Continue stirring for 3 to 5 minutes until the sauce becomes thickened and creamy. Season. Set aside.
Poach the eggs and toast the wholemeal muffins
Add the spinach on to both sides of each muffin, then add the smoked salmon and the soft poached eggs.
Pour over the rich sauce.
