275g Self-Raising flour
1 tsp bicarbonate of soda
1 tsp baking powder
5 tbsp vegetable oil
1 tsp vanilla extract
1 tin ready made caramel (or homemade)
1 500g packet of Maltesers plus extra for decorating
3 ripe bananas
Sift the dry ingredients together in one bowl.
Mix the vegetable oil, milk, eggs, bananas and vanilla extract in another bowl.
Gently add the wet ingredients into the dry ingredients and stir gently until just combined. Do not over mix.
Fill the bottom of each muffin case with the muffin mix then add a tsp of caramel and 4 maltesers to each one.
Add more mix on top to cover and repeat until all are filled and the mixture has all gone.
Bake for 25 minutes at 190°c pre heated oven.
Enjoy as they are or decorate with buttercream icing.
