Low Carb Coconut Granola

Another JW staple in my house. Great at any time of the day, healthy and easy to make. No fuss.

This makes 7 portions. Once cooled weigh it all together and divide by 7 to give you the portion size.

Ingredients

140g rolled oats
85g mixed seeds
85g pecan nuts
85g coconut chips
Pinch of salt
100g unsweetened apple sauce
45g coconut oil runny not solid
45g raw honey
95g raisins
95g unsweetened apricots chopped
110g full fat greek yoghurt

Method
In a large bowl mix together the oats, mixed seeds, pecans, coconut chips and salt.
Preheat the oven to 160 and line a baking tray with wax paper.
Mix together the coconut oil, honey and apple sauce then pour into the dry ingredients.
Stir well to completely coat everything.
Pour on to the prepared tray and bake for 25 minutes, stirring often so it doesn’t burn.
Once ready remove from the oven and mix in the apricots and raisins. Leave to cool.
Weigh it all then divide in to 7 equal portions and serve with 110g of natural full fat greek yoghurt.
