Kedgeree

Ingredients
150g smoked cod
130g cooked brown rice
60g frozen peas
1 tbsp curry powder
1 small white onion chopped finely
1 egg, soft boiled
21 tsp chopped fresh parsley
1 tsp olive oil

Method
In a large fry pan add the onion and cook on medium until it has softened.
Add the curry powder and stir for a minute.
Place the smoked cod on a plate, cover with cling wrap and cook until just cooked through. The fish should be slightly opaque.
Add the brown rice to the fry pan and stir thoroughly to coat with the onion and curry powder.
Boil your egg.
Flake the fish and add it to the rice. Gently stir through and add the parsley.
Serve with the egg on top.
