I love that weekend feel she life runs a little slower and a few minutes in the kitchen turns into a fabulous brunch.
Serves 2
Ingredients
1 Seeded ciabatta roll halved lengthways
2 eggs
2 large handfuls of baby spinach
4 tsps chilli jam
150g sliced mushrooms
1 tbsp olive oil
Cracked black pepper
1 tsp crushed garlic
2 tsps fresh chopped basil
Method
Toast the ciabatta.
In a fry pan add the olive oil, mushrooms, basil, garlic and season with black pepper.
Cook until softened and add the spinach to wilt alongside the mushrooms.
In a small saucepan full of water, bring to the boil then lower to simmer, add the eggs and poach to your liking. Soft is my favourite 😊
Spread the chilli jam onto the ciabatta and then add the wilted spinach and mushrooms.
Place the egg on top and sprinkle with smoked paprika.
Yum.
This is quick and easy but so delicious and it uses this you probably already have in your fridge.
