▪1 cup cottage cheese
▪1/3 cup plain flour
▪2 tbsps vegetable oil
▪Mix all the ingredients together and fry using an olive oil spray, just a little.
▪Use a 1/4 cup per pancake when you see bubbles appear flip over and cook the other side.
▪Serve with pure maple syrup, manuka honey or even a squeeze of lemon juice with natural yoghurt and fresh berries.
