Pear, pine Nut and Prosciutto Salad

4 slices prosciutto
2 pears
1 tbsp olive oil
1 red onion
4 cups mixed lettuce leaves
3/4 cup pine nuts
150g shaved parmesan

1/4 cup olive oil
1/2 cup fresh lemon juice
2 tsps raw honey

Wash the mixed lettuce leaves and dry on paper towel
Fry the prosciutto in the oil until crispy, drain on paper towel.
Core and thinly slice the pears.
Mix the dressing ingredients together.
In a large bowl add these lettuce leaves, sliced pears, red onion, half the pine nuts and half the parmesan. Add the dressing and lightly toss to mix.
Place in serving bowls then top with the rest of the parmesan, pine nuts and crumble the prosciutto over the top.
