150g chicken breast, sliced into 3 large pieces
1 cup breadcrumbs
3 tbsp smoked paprika
1 tsp salt
100g coleslaw mix
60g sour cream
40g full fat feta cheese
2 tsps fresh chopped parsley
3/4 cup franks hot sauce
Preheat the oven to 180°C. Line a baking tray with foil.
Spray the foil with olive oil
In a bowl mix the breadcrumbs, smoked paprika and salt. Stir well.
Drop the chicken breast slices in and coat well.
Place onto the prepared baking tray. Bake for 25 to 30 minutes until cooked through.
In a blender, mix together the sour cream, feta and parsley. Blitz until smooth.
In a bowl add the coleslaw mix and pour over the feta dressing. Toss lightly to coat everything.
Place the hot sauce in a separate bowl and drop in the cooked chicken strips turning to coat.
Serve on a plate with the salad.
I make this in bulk and use it for food prep, it never lasts very long before its all gone.
The dressing can be made with your cheese of choice to change it up. Try Philadelphia, Roule` or Blue cheese.
