1kg steak of choice (this was scotch fillet)
2 green capsicum chopped to bitesize pieces
2 red capsicum chopped to bitesize pieces
1 pack thick cut back bacon chopped
6 red onion chopped

Method
Cut the beef into small pieces and mix with 2 tbsps veg oil until covered. Add salt and pepper.
Layer the skewers and continue until all the ingredients are used.
Place on the bbq on high heat for 3 to 4 minutes each side and the serve.
Guacamole
2 ripe avocado
1 red chilli
2 tbsps sour cream
Juice half a large lemon
1 garlic clove
Salt and ground black pepper to taste.
Blitz together until smooth, place in a serving bowl our store in an airtight container for up to a week.
Salsa
1 punnet of cherry tomatoes quartered.
1 bunch fresh coriander chopped
1 red onion finely chopped
Salt to taste
Squeeze of lemon
Mix together, serve.
