Choc Chip and orange Muffins

Preheat the oven to 180°C
Line your muffin tray with cake cases.

250g pain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
175g caster sugar
200g choc chips
250ml milk
1 large egg
1 tsp vanilla extract
2 medium oranges, juice and zest.

Sieve all the dry ingredients together with the choc chips
Mix together the milk, vanilla extract, egg and orange juice together with half the orange zest.
Pour the wet ingredients into the dry and stir until just combined. Do not over mix or the muffins will be tough and chewy.
Sprinkle the rest of the zest on top and bake for 25 to 30 minutes, or until a skewer comes out clean.

Double the recipe as these freeze really well.
