I have been asked to re post the yoghurt cake recipe so here it is 😊
I made three so you can see how versatile and easy it is.
Raspberry and Banana
Blueberry and Banana
2 cups self-raising flour
1 cup greek yoghurt
1 cup vegetable oil
1 tsp vanilla extract
11/2 cups caster sugar
3 medium bananas
250g fresh raspberries
170g blueberries, frozen are fine too
1 tin/plastic tub of plums in juice, drained
Mix the eggs and sugar together until combined.
Add the yoghurt and vegetable oil and mix thoroughly.
Add the flour and stir until combined.
Pour into a lined cake tin 23cm.
Add the topping, sliced bananas and raspberries. Mix through the batter gently.
Bake for 60 minutes or until a skewer comes out clean.
