reamy Corn & Chicken Filo Quich
My friends are really great at passing on recipes that they have seen or tried and this one is both delicious and ridiculously quick and easy to make.

4 to 6 sheets ready made filo pastry
1 cup cooked and shredded chicken
2 spring onions, sliced
1 cup of mixed spinach and rocket, shredded
3/4 cup of skim milk
1/2 cup strong cheddar, grated
310g tin creamed corn
Preheat the oven to 200°C 180 fan forced.
Spray your springform quiche tin.
Layer the filo one sheet at a time, spray with olive oil between each sheet. Allow to overlap.
Add the shredded chicken, spring onions,spinach/rocket and cheddar cheese.
Mix together the eggs, skim milk and creamed corn, season and pour on top.
Scrunch the filo that is hanging over so it forms a rustic edge.
Bake for 30 to 40 minutes.
Serve with a fresh green salad or steamed veg.
