Lemon and Pepper Mackerel with Roasted Butter Cabbage and Bacon
1 lemon zest and juice of half the lemon
Salt and pepper
1/2 green cabbage sliced
1 packet of middle bacon, chopped
Olive oil, mild
In a frypan add 35g butter and a splash of olive oil
Heat the oven to 220°C and melt 50g butter.
Once melted add the chopped bacon and cook for 15 minutes, stirring half way. Add the sliced cabbage and stir well. Cook for another 20 minutes until the cabbage softens but does not colour.
Add the mackerel fillets to the fry pan with ground salt and black pepper, add the zest of the lemon.
Cook for 5 minutes each side so the fish is golden brown. Squeeze over the juice of half a lemon.
This is quick and easy but looks and tastes amazing.
