Butter for greasing
200g butter, chopped
200g dark chocolate (70%)
3 large whole eggs
2 large egg yolks
270g (1 1/4 cups caster sugar)
115g (3/4 cup) plain flour
35g (1/4 cup) cocoa powder
1 tsp vanilla extract
150g reese’s pieces
200g dark choc chips
Preheat the oven to 160°C.
Grease and line your brownie tray/tin
Using a double broiler or microwave, melt the butter and dark chocolate together. Remove from the heat and allow to cool for 15 minutes so the eggs don’t curdle.
In a separate bowl sift the plain flour, cocoa powder then add the sugar. Stir to combine.
Add the eggs and egg yolks to the cooled chocolate mixture then add the dry ingredients and stir until just combined. Try not to over stir it.
Add the reeses pieces and choc chips, one gentle stir then pour into the prepared tray. Add the marshmallows and push down gently.
Bake for 45 to 55 minutes oven depending .
Do not be tempted to overcook as they should be deliciously moist.
