Blooming Onions with Horseradish Dipping Sauce.

I first ate this during our visit to America, it is a little bit fiddly and messy and something that you make once in a while, but make no mistake it is so good that you don’t care about the calories, you just want to eat it and not stop. #noregretsiloveonionbloomsandsowillyou 😍😍


3 medium sweet onions
Vegetable Oil
6 tablespoons plain flour
3 teaspoons smoked paprika
2 teaspoons ground cumin
1 teaspoon salt
1teaspoon cracked black pepper
2 teaspoon dried garlic
2 teaspoons dried oregano
2 eggs
2 cups buttermilk

Horseradish Dipping Sauce

4 tablespoons full fat mayonnaise
2 teaspoons smoked paprika
1 tablespoon creamed horseradish
2 teaspoons seeded mustard
1 teaspoon tomato ketchup
1 teaspoon worcestershire sauce
Black pepper to season.
Mix everything together and place in a serving bowl.

Preheat the oven to 180°C
Chop the top off your onions and peel them.
Carefully turn the onion over and slice off the hairy part of the root. Take care not to remove the root itself or it will fall apart.
With the root side up make 4 cuts a little away from the root, continue making cuts until you have 16 equal ones as seen in the pics.
Place the sliced onions in iced water for 10 minutes then drain and gently dry.
Using a paring knife, carefully remove the core.
Mix together the flour, paprika, dried garlic,oregano, cumin, salt and black pepper and mix thoroughly.
Mix together the eggs and buttermilk..
Separate each petal of the onion and using a spoon submerge it into the egg mixture. Drain and place into the flour mixture. Separate the petals and place the flour into each section, as s much as possible. Then repeat through the egg mix and repeat the flour step.
Heat the oil in a deep saucepan and using a slotted spoon place the onion in root side down until submerged. Leave it alone and cook for 10 minutes until the onion is cooked and it beautifully crispy and golden brown.
Repeat this for all the onions, then drain on kitchen paper and place into the preheated oven to stay warm whilst you make the dipping sauce.
Place on a serving plate with the dipping sauce and watch in delight as your family and friends pull away the crispy petals. Enjoy.
