Light Rye Bread

Still on the rye bread train 😃

Ingredients
11/2 tablespoons dried yeast
2 cups warm water
11/2 teaspoons salt
11/2 cups rye flour
3 cups strong plain flour
1/4 tsp cornflour + 1/4 cup water

Method
Preheat the oven to 230°C
Into the bowl of a stand mixer add yeast,water, salt and rye flour. Mix to combine. Add the strong plain flour 1 cup at a time, adding more if needed so the dough forms a ball that doesn’t stick to the bowl.
Place in a lightly greased bowl and leave to rise for an hour or so until double its size.
Shape into the round loaf in the same way you did for the dark rye bread, place into a pizza stone or baking tray, lightly covered with flour and leave to rise for 45 minutes.
Mix the cornstarch and water together, microwave for 30 seconds then brush over the bread.
Bake for 30 minutes.
