Chocolate Brownie Cookies

85g unsweetened cocoa powder
400g caster sugar
125ml vegetable oil
2 teaspoons vanilla extract
4 eggs
250g plain flour
2 teaspoons baking powder
60g icing sugar
1/2 tsp salt

In a large bowl add the cocoa, caster sugar and vegetable oil. Mix to combine.
Beat in the eggs, one at a time and add the vanilla extract.
Combine flour, baking powder and salt and add it to the cocoa mixture.
Cover and place in the fridge for 4 hours.

Preheat the oven to 180°C and using a tablespoon measure, roll the mixture into balls. Roll theough the icing sugar. Do not flatten, leave space for the cookies to expand.
Line baking trays with wax paper and bake for 10 to 12 minutes.
Transfer to wire racks.
These are best when kept in an airtight container in the fridge.
