Chocolate Yoghurt Cake


1 cup greek yoghurt, natural
1 cup plain flour
3/4 cup cocoa powder
3 eggs
1 cup caster sugar
3/4 cup macadamia nuts, roughly crushed
2 tsps baking powder
1/2 tsp salt
3 tsp vanilla extract
1 tsp chocolate essence
2 cups choc chips (mixed looks great)
1/2 cup vegetable oil
1 tbsp butter
2 tbsps caster sugar

Line a cake tin with baking paper
Preheat oven to 180°C
Mix the flour, cocoa,sugar, baking powder and salt together.
Mix the eggs, yoghurt, vanilla extract, chocolate essence and vegetable oil together.
Pour the wet ingredients over the dry and mix well.
Pour into the prepared cake tin and bake for 45 to 50 minutes until a skewer comes out clean.
Whilst the cake is baking, melt the butter and sugar in a saucepan and add the macadamia nuts. Stir until coated and browned and then pour onto a piece of wax paper to harden and cool a little.
Once the cake is cooked, cool in the tin for 10 minutes, then place on a cooling rack , the base becomes the top.
Add the candied macadamias and chocolate chips and cool. The choc chips will melt a little and become oozy.
Serve with a nice dollop of sour cream 😍
