Red Velvet Pancakes

These are delicious, but very rich so you do not need to eat many, although it will be difficult not to!!
I like my food to be pretty especially when I have other people over, so I always use a cookie cutter to trim the edges of my pancakes. You definitely do not have to do this, but if you do, use a cutter that is almost the same size as your pancake so that you do not waste too much. Enjoy.

Ingredients
2 cups plain flour
2 tbsps cocoa powder
2 tsps baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
2 cups buttermilk
1/2 cup caster sugar
2 large eggs
1 tbsp red food colouring, I use the paste but if using liquid you will need more.
2 tsp vanilla essence
1/3 cup salted butter ,melted
Fresh berries and mint to serve.

Cream Cheese Drizzle

6oz cream cheese, room temperature
85g butter, room temperature
2 cups icing sugar, sifted
1/2 cup milk, more if too thick when drizzling
1 tsp vanilla extract

Method
In a large bowl mix together the plain flour, cocoa powder, bicarbonate of soda, baking powder, salt and caster sugar.
In another bowl mix together the eggs, buttermilk, fo9d colouring, vanilla essence and melted butter.
Once combined pour the wet mix into the dry and stir to combine.
On medium to low heat add a 1/3 cup of the mix to a fry pan and wait to see bubbles form, flip over and cook for another minute or so.
Repeat until all the mixture is used.

To make the drizzle, add everything together and whisk until smooth with an electric whisk. Run through a sieve to remove any lumps from the icing sugar.

Assemble and serve with fresh berries and mint.

These freeze really well.
