These are pretty versatile and if using them for breakfast you can serve with some greek yoghurt and maple syrup, however I wanted to show you how I use them as a grown up dessert as well. 😍
2 tablespoons instant coffee
2 tablespoons boiling water
200g self-raising flour
200g full fat greek yoghurt
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1 tablespoon caster sugar
40g unsalted butter, melted
2 tablespoons extra thick cream
1 tablespoon coffee liqueur
Dissolve the coffee in the hot water and set aside.
In a large bowl sift the flour, salt, bicarbonate of soda, baking powder then add the caster sugar.
In another bowl add the coffee, yoghurt, milk, egg and melted butter. Stir to combine.
Add the wet mix to the dry and stir thoroughly.
On medium to low heat in a non stick fry pan, use a 1/3 cup measure and drop into the pan.
When bubbles form, flip and cook the other side, be careful not to burn them.
Continue until all the mix has been used.
Mix the thick cream and liqueur together.
Serve with the cream on top, a cup of the liqueur at the side and a sprinkle of cocoa powder.
