Malai Kofta


1 tbsp oil
1 tbsp butter
1 stick cinnamon
1 bay leaf
3 cloves
1 black cardamom
3 green cardamom
1 tsp shahi jeera (caraway seeds)
1 large chopped onion
1 green chilly, chopped
1 garlic clove, grated
1 tsp fresh ginger, grated
1 tsp turmeric
1 tbsp kashmiri chilli powder
1 tbsp ground coriander
1/2 tbsp ground cumin
1/2 tsp ground fenugreek
2 cups chopped tomatoes
Salt to taste
Handful of cashew nuts
3 cups water
1 cup cream
1 tbsp sugar

Great the oil and butter on medium heat and add the black cardamom, green cardamom and shahi jeera, stir for 2 minutes.
Add the chopped onion and stir for 5 minutes to soften.
Add the chopped green chilli, garlic and ginger, cook for 3 minutes then add the turmeric, kashmiri chilli powder, ground coriander and ground cumin.
Add the tomatoes.
Add salt and the cashew nuts, reduce the heat and place a lid on the pan. Add the water, cook for 7 minutes, stir occasionally until the tomatoes become mushy.
Remove from the heat and use a blender or stick blender until the sauce is smooth.
Place a sieve over a clean pan and pass the sauce through.
Place the sieved sauce onto medium heat, bring to the boil then add the fenugreek powder, salt if needed and sugar.
Remove from the heat and stir in the cream and a handful of chopped fresh coriander.

Kofta Kofta


1 cup boiled and mashed plain potato, no butter or milk. Cold.
1 cup paneer
2 tbsps fresh chopped coriander
2 tbsps chopped cashews
1 1/2 tbsps cornflour
Vegetable oil for frying.


In a large bowl mix all the ingredients together and form into round balls.
Place in the fridge for 30 minutes.
Deep fry until golden.

To serve

Place the fried kofta into a dish and pour over the curry sauce. Sprinkle with chopped coriander.
Serve with garlic naan and chapati.

Don’t be put off by the long list of ingredients, this is a beautiful dish that you can prep ahead and is well worth the effort. Make sure you do not place the fried kofta in the sauce, I have tested it and they will disintegrate in the sauce so much better to do it the way I have described here.
