This is not so much a recipe as a staple in my house when I have food left in the fridge that needs to be used up. It is never the same twice as it depends what is left to use and I then add herbs and different spices depending on what I feel like at the time. It may be curry, or smoked paprika or just herbs. I love it! Quick, simple and a great way of using everything rather than throw it away.
200g sausage, cooked
350g pork ham steak (gammon steak), diced
2 green capsicum , diced
1 red capsicum, diced
4 eggs lightly beaten
350g cooked leftover basmati rice
1 large white onion, chopped finely
3 cloves garlic, chopped finely
3 tsps chopped fresh coriander
1 red chilli, seeds removed.
In a frying pan, add the olive oil, heat on medium and cook the onion and garlic until softened.
Add the pork ham steaks and cook for 3 to 5 minutes.
Add the sausage, red and green capsicum, rice and chilli and cook for 5 to 7 minutes.
Push to one side of the pan and add the eggs, scramble and gently mix through the rice. Add the chopped coriander and serve.
